INGREDIENTS

Steps

  1. Mix ground chicken with seasoning and phosphate in bowl chopper

  2. Blend till uniform

  3. Add half of water, Protein Blend and Stabiliser

  4. Blend till uniform

  5. Add in oil and blend

  6. Add remaining water starch then blend

  7. Spread onto sheet and bake at 150°C for 20-40 mins depending on thickness

Curry

Steps

  1. Disperse Texturant Blend in water and stir until homogenous

  2. Gentle mix for 1 min

  3. Add tomato sauce to the mixture and mix for 1 min

  4. Heat mixture up to 85°C whilst mixing for 5 min

  5. Cool mixture to 2°C

  6. Cut gel into desired size then incorporate with meat matrix
